OverviewThis lecture will examine the mechanisms of fresh seafood distribution in Japan and the changes and challenges occurring on the front lines, through the lens of the Toyosu Market. Seafood is a commodity whose value is determined by its "freshness," and speed, advanced temperature control, hygiene management, and information sharing are essential for logistics connecting production areas to markets, retailers, and consumers. At the Toyosu Market, progress is being made in creating a safe and secure distribution infrastructure through the latest low-temperature logistics, hygiene measures, and the use of ICT. However, at the same time, the environment surrounding seafood distribution is changing dramatically, with factors such as declining and fluctuating catches, soaring logistics costs, a shortage of workers, and changes in fish-eating culture and consumer behavior.
To ensure that Toyosu Market, Japan's largest wholesale market, continues to be a vital link between producers and consumers, we will explore the future of sustainable seafood distribution with an instructor who has intimate knowledge of the field.
*The outline is subject to change. Minor changes may occur on the day of the lecture.
